Raw Linden Honey — What It Is and Why It's Rare

Linden honey — also known as lime blossom honey or tilia honey — is produced from the nectar of linden trees (Tilia genus), known in the UK as lime trees. Despite the name, linden trees are not related to the lime fruit. They are the large, fragrant-flowering trees found throughout Central and Eastern Europe, and the tree traditionally associated with apothecary and folk medicine traditions across the region.

Our linden honey comes from Transylvania, where linden trees grow prolifically in the forests and along riverbanks. The trees bloom for a short period each summer, producing nectar with a distinctive herbal, slightly minty, and lime-blossom character that bees collect intensively during the brief flowering window.

In Central Europe, linden honey has been prized for centuries as one of the most medicinally regarded honey varieties. It is one of the rarest and hardest to find in the UK market in genuinely raw, single-origin form.

What is the difference between linden honey and lime blossom honey?+
They are the same honey described by different names. Linden is the name used in Continental Europe for the Tilia genus of trees. In the UK, the same trees are commonly called lime trees, so the honey is sometimes called lime blossom honey or lime tree honey. It has no relation to the lime fruit. The distinctive herbal, minty flavour comes from the Tilia blossom nectar.
