Tasting Notes

Bright, Golden, and Warmly Sweet. The Taste of Transylvanian Summer.

Sunflower honey is one of the most distinctive honey varieties produced in Central and Eastern Europe. Bright yellow in colour, clean and warm in flavour, and naturally fast-crystallising — its fondant-like texture is a mark of genuine purity that you will almost never find on a supermarket shelf. Read our guide to the unique sunflower honey taste for a deeper look at what makes it special.

Il sapore

Lightly floral with warm buttery, caramel undertones and a clean, sunny sweetness. Mild and widely appealing.

Aroma

Fresh sunflower blossom with a warm, sweet floral note. Light and inviting with no bitterness.

Struttura

Naturally crystallises quickly into a smooth, creamy fondant. Spreadable and easy to use.

Colore

Bright warm gold with a yellow tint. One of the most visually distinctive honeys in the range.

Warm Bright GoldThe vivid yellow-gold colour of sunflower honey comes directly from the pigments in sunflower nectar and pollen. It is one of the most recognisable honey colours, reflecting the flower fields of Transylvania at peak summer bloom.

Why does sunflower honey crystallise so fast?

Fast Crystallisation Is a Sign of Purity. Not a Flaw.

Sunflower honey has one of the highest glucose concentrations of any honey variety. Glucose crystallises readily at room temperature, which is why raw sunflower honey sets quickly into a creamy fondant-like texture. This is not a defect. It is one of the most reliable indicators that the honey is genuinely raw and unprocessed. Commercial producers heat and ultra-filter sunflower honey specifically to prevent crystallisation and extend shelf life as a liquid. In doing so, they destroy the enzymes, antioxidants, and active compounds that make raw honey nutritionally distinct. Our sunflower honey is never heat-treated. The texture you receive is exactly what nature intended.

Origin & Provenance

From Our Family Apiaries in Transylvania. Six Generations of Beekeeping.

Our Sunflower Honey is harvested from the same family apiaries in Transylvania, Romania that produce our Acacia and Linden honeys. These are not anonymous sourcing arrangements. HoneyBee & Co. founder Dragos Nistor grew up watching his father and grandfather tend these hives. The same apiaries that supplied three generations of family have been producing this honey since before Dragos was born.

Transylvania’s sunflower fields bloom across vast expanses of agricultural land in summer. The bees forage almost exclusively on sunflower nectar during the bloom, producing a monofloral honey of exceptional purity and consistency. The clean Transylvanian landscape, with its low industrial footprint, means the nectar is free from the pollutants that affect sunflower honey from more intensively farmed regions.

The honey is cold-extracted immediately after harvest and bottled without heating, filtering, or blending. Due to its fast-crystallising nature, raw sunflower honey must be bottled quickly after extraction before the crystals set in the container. This narrow processing window is one reason genuine raw sunflower honey is rarely found on supermarket shelves.

What Makes It Special

Three Things That Make Raw Sunflower Honey Genuinely Unique

Sunflower honey has characteristics shared by no other common honey variety. Understanding them helps you appreciate what is in the jar and why it behaves the way it does.

🦨

The Only Honey Containing Pure Lecithin

Sunflower honey is the only honey variety known to contain pure lecithin — a phospholipid compound that plays a role in cell membrane structure and fat metabolism. This is a direct result of the unique composition of sunflower nectar and pollen and is not found in any other honey type. It is one of the biochemical properties that makes sunflower honey nutritionally distinctive.

🍌

Unfiltered. Natural Pollen Intact.

Most commercial sunflower honey is ultra-filtered to remove pollen and extend liquid shelf life. Ours is not filtered beyond the removal of wax debris. The natural pollen from the sunflower bloom remains intact in the jar. Bee pollen is a naturally occurring component of raw honey containing protein, amino acids, and antioxidant compounds that are absent from ultra-filtered alternatives.

🌞

Rare as a Raw Product

Because raw sunflower honey crystallises so rapidly after extraction, it must be bottled within a very short window before the crystals set in the container. This makes it costly to handle and difficult to produce at commercial scale. Most producers heat-treat it to keep it liquid indefinitely. You will almost never find genuinely raw sunflower honey in a supermarket. Ours is always raw.

Natural Properties

The Natural Properties of Raw Sunflower Honey

Raw sunflower honey is never heated above hive temperature, so its full natural composition is preserved. These properties are absent in pasteurised or heat-treated sunflower honey.

🌿

Antioxidants and Flavonoids

Sunflower honey contains flavonoids and polyphenolic compounds derived from sunflower nectar and pollen. Research has confirmed that raw monofloral honeys retain antioxidant activity directly related to their botanical origin. Heating destroys these compounds, which is why raw sunflower honey has a demonstrably different nutritional profile to its pasteurised equivalent.

🛡

Natural Antibacterial Activity

Raw sunflower honey contains glucose oxidase, the enzyme responsible for producing hydrogen peroxide upon contact with moisture — the primary mechanism of honey’s natural antibacterial properties. These enzymes survive only in raw, unheated honey. Our sunflower honey is never pasteurised, so these compounds remain active in every jar.

Vitamins and Lecithin

Sunflower honey is notably rich in vitamins E, B-complex, and vitamin P (rutin), as well as being the only honey variety to contain pure lecithin. Lecithin is a naturally occurring phospholipid found in sunflower seeds and concentrated in the nectar and pollen. These compounds are preserved only in raw, unfiltered honey and are absent from processed alternatives.

🌿

Natural Energy and Minerals

Sunflower honey provides natural energy through its high glucose and fructose content alongside trace minerals including potassium, calcium, and magnesium from the sunflower nectar. Raw sunflower honey has one of the highest natural energy densities of any honey variety, making it a popular choice for athletes and active individuals as a natural pre- or post-exercise food.

How to Use It

Six Ways to Enjoy Transylvanian Sunflower Honey

The mild warmth and natural fondant texture of sunflower honey make it one of the most versatile and enjoyable honeys in our range. It spreads beautifully, bakes cleanly, and pairs across a wide range of foods and drinks.

🍳

Toast and Bread

Once crystallised, sunflower honey spreads like butter — smooth, creamy, and clean. It does not drip or pool. Perfect on warm toast, crumpets, rye bread, or wholegrain. The warm sweetness pairs particularly well with salted butter.

Most popular use
🥣

Porridge and Breakfast

Stir a spoonful into hot porridge or overnight oats. The warmth dissolves the crystals instantly, releasing the honey’s full flavour. Works beautifully with banana, cinnamon, and toasted seeds on top. Also excellent drizzled over Greek yoghurt.

Everyday breakfast

Tea and Hot Drinks

A level teaspoon dissolves quickly in warm drinks. Its clean, mild sweetness does not compete with tea flavours. Add it when the drink has cooled slightly below 40°C to preserve the natural enzymes. Works well in black tea, herbal blends, and warm lemon water.

Baking

The mild, warm flavour of sunflower honey makes it an excellent all-purpose baking honey. It imparts a subtle sweetness without a strong honey character, making it suitable for recipes where you want natural sweetness without the honey dominating the flavour of the finished dish.

Versatile in baking
🧀

Cheese Pairings

Sunflower honey pairs particularly well with blue cheeses — its warm sweetness counterbalances the sharp saltiness of stilton, gorgonzola, and roquefort. Also works with soft goat’s cheese and hard aged varieties. Place a small portion on the board directly alongside the cheese.

Excellent with blue cheese
🥤

Straight from the Jar

Take a level teaspoon of crystallised sunflower honey and let it melt slowly. The fine crystal structure dissolves gradually, releasing a warm, clean sweetness with a gentle floral character. This is one of the most pleasurable ways to appreciate the quality and purity of a raw monofloral honey.

Provenance and Trust

A Family Heritage That Spans Six Generations

HoneyBee & Co. was founded by Dragos Nistor, whose family has kept bees in Transylvania for over six generations. Our Sunflower Honey comes from the same family apiaries in Transylvania that have produced honey for the Nistor family since long before the company existed. This is not marketing heritage. It is the genuine story behind every jar.

We never blend our honeys across sources or add cheaper alternatives to meet demand. When seasonal stock is exhausted, we wait for the next harvest. You can read the full story of our Transylvanian heritage in our article from Transylvanian Apiaries to Three Consecutive Vogue Features.

The same continuity of sourcing that runs through our acacia and linden honeys applies here. Same landscape, same beekeeper family, same commitment to raw, unprocessed honey.

Everything You Need to Know About Sunflower Honey

What is sunflower honey and where does it come from?+
Sunflower honey is a monofloral honey produced when bees forage primarily on the nectar of sunflower (Helianthus annuus) crops. It is characterised by its bright golden colour, mild warm sweetness, and rapid natural crystallisation. Our sunflower honey comes from our family’s own apiaries in Transylvania, Romania, where our founder Dragos Nistor grew up watching his father and grandfather tend their hives across six generations of beekeeping heritage. It is raw, cold-extracted, and bottled without heating, filtering, or blending.
Why has my sunflower honey gone solid? Is it still good?+
Yes, completely fine. Sunflower honey is one of the fastest-crystallising honey varieties because of its exceptionally high glucose content. Crystallisation in raw honey is natural and a positive sign of purity. It does not affect quality, flavour, or nutritional value. To return it to a softer consistency, place the closed jar in a bowl of warm water (no hotter than 40°C) for 15 to 20 minutes and stir gently. Do not use boiling water or a microwave as this will damage the natural enzymes.
Is sunflower honey the same as regular honey?+
No. Sunflower honey is a monofloral honey with specific characteristics that distinguish it from generic blended honey. It has a higher glucose content, which causes faster crystallisation, a different flavour profile (warmer, more caramel-like), and unique nutritional compounds including lecithin that are not found in other honey types. Most "regular honey" sold in supermarkets is a pasteurised blend from multiple countries. Our sunflower honey is a single-origin, raw, traceable product from a specific family apiary in Transylvania.
What makes Transylvanian sunflower honey special?+
Transylvania is one of the most celebrated honey-producing regions in Central and Eastern Europe. The combination of clean, unpolluted landscapes, fertile soils, and large expanses of sunflower cultivation creates conditions for honey of exceptional purity. Most Transylvanian sunflower fields are grown without the intensive pesticide use common in Western European agriculture. The resulting nectar is correspondingly cleaner, and the honey reflects this in both flavour and pollen content. Our family has produced honey from this specific landscape for over six generations.
What are the health benefits of raw sunflower honey?+
Raw sunflower honey contains natural enzymes, antioxidants, flavonoids, vitamins E and B-complex, vitamin P (rutin), and is the only honey variety to contain pure lecithin. It has natural antibacterial properties through hydrogen peroxide activity. These compounds are present only in raw, unheated honey and are destroyed by pasteurisation. We make no medical claims about this product. The information above is for educational purposes only.
How should I store sunflower honey?+
Store at room temperature in a cool, dry place away from direct sunlight and heat sources. Do not refrigerate. Sunflower honey will crystallise naturally — this is expected and normal. Keep the lid firmly closed. Raw honey stored correctly has an almost indefinite shelf life.
