Why does sunflower honey crystallise so fast?
Fast Crystallisation Is a Sign of Purity. Not a Flaw.
Sunflower honey has one of the highest glucose concentrations of any honey variety. Glucose crystallises readily at room temperature, which is why raw sunflower honey sets quickly into a creamy fondant-like texture. This is not a defect. It is one of the most reliable indicators that the honey is genuinely raw and unprocessed. Commercial producers heat and ultra-filter sunflower honey specifically to prevent crystallisation and extend shelf life as a liquid. In doing so, they destroy the enzymes, antioxidants, and active compounds that make raw honey nutritionally distinct. Our sunflower honey is never heat-treated. The texture you receive is exactly what nature intended.

Our Sunflower Honey is harvested from the same family apiaries in Transylvania, Romania that produce our Acacia and Linden honeys. These are not anonymous sourcing arrangements. HoneyBee & Co. founder Dragos Nistor grew up watching his father and grandfather tend these hives. The same apiaries that supplied three generations of family have been producing this honey since before Dragos was born.
Transylvania’s sunflower fields bloom across vast expanses of agricultural land in summer. The bees forage almost exclusively on sunflower nectar during the bloom, producing a monofloral honey of exceptional purity and consistency. The clean Transylvanian landscape, with its low industrial footprint, means the nectar is free from the pollutants that affect sunflower honey from more intensively farmed regions.
The honey is cold-extracted immediately after harvest and bottled without heating, filtering, or blending. Due to its fast-crystallising nature, raw sunflower honey must be bottled quickly after extraction before the crystals set in the container. This narrow processing window is one reason genuine raw sunflower honey is rarely found on supermarket shelves.

What Makes It Special
Three Things That Make Raw Sunflower Honey Genuinely Unique
Sunflower honey has characteristics shared by no other common honey variety. Understanding them helps you appreciate what is in the jar and why it behaves the way it does.
The Only Honey Containing Pure Lecithin
Sunflower honey is the only honey variety known to contain pure lecithin — a phospholipid compound that plays a role in cell membrane structure and fat metabolism. This is a direct result of the unique composition of sunflower nectar and pollen and is not found in any other honey type. It is one of the biochemical properties that makes sunflower honey nutritionally distinctive.
Unfiltered. Natural Pollen Intact.
Most commercial sunflower honey is ultra-filtered to remove pollen and extend liquid shelf life. Ours is not filtered beyond the removal of wax debris. The natural pollen from the sunflower bloom remains intact in the jar. Bee pollen is a naturally occurring component of raw honey containing protein, amino acids, and antioxidant compounds that are absent from ultra-filtered alternatives.
Rare as a Raw Product
Because raw sunflower honey crystallises so rapidly after extraction, it must be bottled within a very short window before the crystals set in the container. This makes it costly to handle and difficult to produce at commercial scale. Most producers heat-treat it to keep it liquid indefinitely. You will almost never find genuinely raw sunflower honey in a supermarket. Ours is always raw.
Natural Properties
The Natural Properties of Raw Sunflower Honey
Raw sunflower honey is never heated above hive temperature, so its full natural composition is preserved. These properties are absent in pasteurised or heat-treated sunflower honey.
Antioxidants and Flavonoids
Sunflower honey contains flavonoids and polyphenolic compounds derived from sunflower nectar and pollen. Research has confirmed that raw monofloral honeys retain antioxidant activity directly related to their botanical origin. Heating destroys these compounds, which is why raw sunflower honey has a demonstrably different nutritional profile to its pasteurised equivalent.

Raw sunflower honey contains glucose oxidase, the enzyme responsible for producing hydrogen peroxide upon contact with moisture — the primary mechanism of honey’s natural antibacterial properties. These enzymes survive only in raw, unheated honey. Our sunflower honey is never pasteurised, so these compounds remain active in every jar.

Once crystallised, sunflower honey spreads like butter — smooth, creamy, and clean. It does not drip or pool. Perfect on warm toast, crumpets, rye bread, or wholegrain. The warm sweetness pairs particularly well with salted butter.

Stir a spoonful into hot porridge or overnight oats. The warmth dissolves the crystals instantly, releasing the honey’s full flavour. Works beautifully with banana, cinnamon, and toasted seeds on top. Also excellent drizzled over Greek yoghurt.
Everyday breakfastTea and Hot Drinks
A level teaspoon dissolves quickly in warm drinks. Its clean, mild sweetness does not compete with tea flavours. Add it when the drink has cooled slightly below 40°C to preserve the natural enzymes. Works well in black tea, herbal blends, and warm lemon water.
