Soft set honey — also known as creamed honey — is produced through a process called controlled crystallisation. A small amount of finely crystallised seed honey is introduced into liquid raw honey, which is then stirred and cooled slowly. This encourages the formation of thousands of tiny, uniform crystals rather than the large, coarse crystals that form in uncontrolled granulation. The result is a honey with the same raw nutritional profile as liquid honey, but with a smooth, buttery, spreadable consistency. Our Soft Set Honey starts as raw British wildflower honey harvested from our SALSA certified beekeeper in the British Midlands. This is not a blend of anonymous EU honeys. It is traceable, single-region British honey that we know intimately.
The Midlands landscape supports a rich diversity of native wildflowers — clover, borage, bramble, hawthorn, and dandelion among many others — which give the base honey its characteristic delicate, floral flavour. The controlled crystallisation process preserves every enzyme, antioxidant, and naturally occurring compound present in the raw honey.
No heat is applied above natural hive temperature at any stage. The honey is never pasteurised. The soft set process is entirely mechanical — controlled stirring and cooling — with no additives of any kind. What you receive in the jar is 100% pure British raw honey in a more convenient form.
