About This Honey

Raw Transylvanian Sunflower Honey

Sunflower honey is one of the most distinctive monofloral honeys produced in Central and Eastern Europe. In Transylvania, where our family apiaries are located, vast sunflower fields bloom each summer. The bees forage exclusively on sunflower nectar during the peak flowering period, producing a honey with an unmistakable warm, caramel character.

Raw sunflower honey crystallises very quickly — faster than almost any other variety. Within weeks of extraction it sets to a firm, grainy crystal that can be stirred into a smooth paste or spread. This rapid crystallisation is caused by the exceptionally high glucose content of sunflower nectar and is one of the most reliable signs that a sunflower honey is genuinely raw and unheated.

Our sunflower honey is cold-extracted from our family apiaries, never heated above hive temperature, and GS1 barcoded for full Romanian origin traceability.

Why has my sunflower honey set solid so quickly?+
Sunflower honey has one of the highest glucose contents of any honey variety. Glucose crystallises readily at room temperature, which is why raw sunflower honey sets faster than most other honeys — sometimes within weeks of extraction. This rapid crystallisation is a reliable sign that your honey is genuinely raw and unheated. To restore to liquid, place the closed jar in warm water below 40°C for 15 to 20 minutes.
Where does your sunflower honey come from?+
Our sunflower honey comes from our own family apiaries in Transylvania, Romania — the same hives Dragos Nistor's family has managed for over six generations. It is harvested once a year during the sunflower flowering season. Every jar carries a GS1 barcode to verify the Romanian single-origin.
Can I use crystallised sunflower honey in baking?+
Yes. Crystallised sunflower honey can be stirred or whisked into batters, dressings, and glazes directly. The crystals dissolve easily when combined with other ingredients. For spreading, you can also stir the jar firmly with a spoon to create a smooth paste without applying heat. Both the liquid and crystallised forms work well in baking.
