What Makes Raw Honey Different

Raw honey is extracted straight from the hive without heat treatment or pasteurisation. It retains its natural enzymes, pollen, propolis, and antioxidants. These are the compounds that supermarket honey loses through industrial processing. The difference is not subtle. It is fundamental.

Understanding Your Honey
My Honey Has Gone Solid. Is It Still Good?
Yes. Crystallisation is one of the most reliable signs that your honey is genuine and raw. It happens because raw honey contains natural sugars, primarily glucose, that form crystals at room temperature over time.
Supermarket honey has been heated specifically to prevent crystallisation and extend liquid shelf life. In doing so, it loses the natural enzymes and beneficial compounds that make raw honey different to refined sugar.
If your honey has crystallised, the quality, flavour, and natural properties are completely unaffected. It simply needs gentle warming to return to a liquid or soft consistency.

Which varieties crystallise fastest?
Sunflower honey crystallises very quickly due to its high glucose content. Soft set honey is already controlled crystallisation. Heather honey has a unique thixotropic structure. Acacia honey stays liquid the longest due to its high fructose content.

Natural Properties
The Natural Properties of Raw Honey
Raw honey retains naturally occurring compounds that are destroyed by pasteurisation. These properties are present only in raw, unheated honey.
Natural Antioxidants
Raw honey contains naturally occurring polyphenols and flavonoids that may help protect cells from oxidative stress. Research suggests these compounds are significantly reduced by heat treatment. Raw honey may provide greater antioxidant support than pasteurised alternatives.

The same apiaries that produced honey for my grandparents still produce our Acacia, Sunflower, and Linden honeys today.
