What Makes Raw Honey Different

Understanding Your Honey

My Honey Has Gone Solid. Is It Still Good?

Yes. Crystallisation is one of the most reliable signs that your honey is genuine and raw. It happens because raw honey contains natural sugars, primarily glucose, that form crystals at room temperature over time.

Supermarket honey has been heated specifically to prevent crystallisation and extend liquid shelf life. In doing so, it loses the natural enzymes and beneficial compounds that make raw honey different to refined sugar.

If your honey has crystallised, the quality, flavour, and natural properties are completely unaffected. It simply needs gentle warming to return to a liquid or soft consistency.

How to gently restore your honey:

1 Place the closed jar in a bowl of warm water
2 Water temperature: no hotter than 40°C
3 Leave for 15 to 20 minutes, stirring gently
Never microwave or use boiling water. Damages natural enzymes.

Crystallised

Natural. Pure. All nutrients intact. A sign of genuinely raw honey.

Always Liquid

Usually indicates heat treatment or ultra-filtration to prevent natural setting.

Which varieties crystallise fastest?

Sunflower honey crystallises very quickly due to its high glucose content. Soft set honey is already controlled crystallisation. Heather honey has a unique thixotropic structure. Acacia honey stays liquid the longest due to its high fructose content.

Raw honey retains naturally occurring compounds that are destroyed by pasteurisation. These properties are present only in raw, unheated honey.

The same apiaries that produced honey for my grandparents still produce our Acacia, Sunflower, and Linden honeys today.

What is raw honey and how is it different to supermarket honey?+
Raw honey is extracted straight from the hive without heating above hive temperature and without pasteurisation. It retains its natural enzymes, pollen, propolis, and antioxidants. Supermarket honey is typically pasteurised at high temperatures to extend shelf life, ultra-filtered to stay permanently liquid, and blended from multiple countries. The result is a product that looks similar but may have significantly fewer naturally occurring compounds than raw honey.
Why has my raw honey crystallised?+
Crystallisation is a natural process in raw honey and a sign of purity, not a defect. The natural glucose in honey forms crystals at room temperature over time. Supermarket honey has been heat-treated to prevent this, at the cost of destroying natural compounds. To restore your honey, place the closed jar in warm water no hotter than 40°C for 15 to 20 minutes. Do not microwave or use boiling water as this damages the natural enzymes.
Which raw honey should I choose?+
For everyday use and mild flavour, start with Acacia Honey or British Wildflower Honey. For a spreadable texture, British Soft Set Honey is the easiest to use daily. For bold, complex flavour, British Heather Honey is our most distinctive variety. Linden and Sunflower honeys sit between the two, characterful but approachable. How do I know where my honey comes from?+
Every HoneyBee & Co. jar carries a GS1 barcode that can be scanned to verify the country of origin. Our British honeys come from named UK regions, the Yorkshire Moorlands and the English Midlands. Our Transylvanian honeys come from our own family apiaries in Romania. We never label a honey as British unless it is genuinely British, and we never use vague "blend of EU and non-EU honeys" labelling.
Do you offer free delivery on raw honey?+
Yes. Free UK delivery on all orders containing 3 or more jars. Orders are dispatched via Royal Mail Monday to Friday between 9am and 3pm, and typically arrive within 2 to 5 working days. All honey is packaged in recyclable glass jars with eco-conscious materials. If your order has not arrived within 7 days, contact us and we will resolve it straight away.
What is your returns policy?+
We offer a 14-day refund or replacement policy. If your honey arrives damaged or incorrect, contact us within 7 days with your order number and a photo. We will replace it or issue a refund. Whatever works best for you. As honey is a perishable food item, we are unable to accept returns unless the product is damaged, faulty, or unopened in original condition. Can I give raw honey to children?+
Raw honey is not suitable for children under 12 months due to the risk of infant botulism. This applies to all honey varieties regardless of how it is processed. For children over 12 months, raw honey is safe and widely enjoyed.
