Transylvania, Romania
Acacia Honey
Pale gold, crystal clear, mild and delicate. Stays liquid thanks to high fructose. Perfect in tea or drizzled over yoghurt.
Notes: vanilla, clean sweetness, floral
Transylvania, Romania
Linden Honey
Light golden with a fresh, woody-minty character. Also known as lime blossom honey. A Transylvanian staple that pairs beautifully with herbal tea.
Notes: woody, minty, herbaceous
Yorkshire Moors, Britain
British Heather Honey
Dark amber with floral intensity and a thixotropic, jelly-like texture. Our boldest honey. Harvested once a year in late summer.
Notes: warm, woody, deep floral
Product images are indicative. Natural raw honey varies in colour and texture by batch and season - that variation is the signature of authentic single-origin honey.
The tea pairing guide
Which Honey in Which Tea?
Match the intensity of your honey to the strength of your tea. Here is the full pairing guide.
Green and white tea
Use Acacia. These teas are delicate and easily overpowered. Acacia's mild, clean sweetness adds just enough without changing the character. Half a teaspoon is usually enough for a cup.
Chamomile and herbal teas
Use Linden. Its woody-minty notes naturally complement floral and herbal blends. Particularly good in chamomile, peppermint, lemon balm, or rooibos. A traditional Eastern European ritual before bed.
English Breakfast and black tea
Use Heather. Strong black teas need a honey that can hold its own. Heather's bold, complex character matches the depth of Yorkshire tea, Earl Grey, or Assam. Adds richness without being cloying.
Honey, lemon and tea for colds
Heather honey with hot water and fresh lemon is the classic British remedy for sore throats. The NHS lists hot honey and lemon among its self-care suggestions for coughs in adults and children over one year old.
Chai and milky tea
Heather works beautifully in chai. Its bold flavour cuts through spices and milk. Stir in after brewing, away from the heat, to preserve the raw enzymes.
Iced tea and cold brews
Acacia dissolves cleanly in cold liquid (it stays liquid naturally), making it perfect for iced tea. Mix with lemon, fresh mint, and ice for a summer favourite.
Why this selection
Why These Three for Tea?
Each honey was chosen specifically to complement a different tea type. Together they cover every cup.
1
Light, Herbal, and Bold
Acacia is the gentle one for delicate teas. Linden is the herbaceous one for floral blends. Heather is the strong one for black teas. Three honeys cover every tea in your cupboard.
2
Replace Refined Sugar
Raw honey is sweeter per gram than sugar, which means you use less. It also contains natural enzymes and antioxidants that refined sugar simply does not have.
3
Single-Origin Quality
Each honey is traceable to one apiary, one harvest, one beekeeper. Acacia from our family hives in Transylvania. Linden from the same family land. Heather from the Yorkshire Moors.

What Sets It Apart
Raw Honey vs Supermarket Honey
Not all honey is the same. Here is what sets ours apart.
HoneyBee & Co. Raw Honey
- Never heated. Cold-extracted to preserve natural enzymes, pollen, and antioxidants.
- Never blended. Single-origin from one geographical location with full traceability.
- Minimal filtering. Natural pollen and beneficial compounds stay in the jar.
- Fully traceable. Every batch tracked from hive to jar. Our British honey supplier holds SALSA Certification.
Typical supermarket honey
- Pasteurised. Heated to 70 degrees or more, destroying natural enzymes.
- Blended. "Blend of EU and non-EU honeys" with zero traceability.
- Ultra-filtered. Pollen removed entirely, making origin impossible to verify.
- Often adulterated. Some imported honeys contain added sugar syrups.
Six Generations. Two Countries.
From our family to yours.
Our story begins in the forests and meadows of Transylvania, where the Nistor family has tended bees for six generations. Same hives, same flora, same craft - passed from grandfather to grandson, mother to daughter.
Founder Dragos Nistor brought that tradition to Britain and built it out from there - partnering with British beekeepers in Yorkshire and the English Midlands whose work meets the same exacting standards: raw, unblended, traceable, and ethical.
Whether the jar in your hand came from our family hives or from one of our British partners, the standard is the same: raw, unblended, traceable, and ethical.
