Green tea and white tea

Use Acacia. These teas are delicate and easily overpowered. Acacia's mild, clean sweetness adds just enough without changing the character. Half a teaspoon is usually enough for a cup.

Use Linden. Its woody-minty notes naturally complement floral and herbal blends. Linden with chamomile before bed is a combination used for generations in Romanian households.

English Breakfast and black tea

When to add the honey

Always let your tea cool slightly before adding honey. Boiling water (100 degrees) degrades the raw enzymes that make raw honey different from processed sugar. Wait until you can comfortably sip it, then stir in the honey.
