Our Linden honey is one of the rarest honey varieties we sell, and one of the most traditionally valued in Central European history. Harvested once a year from the brief 2 to 3 week linden bloom in our family's Transylvanian forests. Known as lime blossom honey across Britain and Europe, it carries a delicately herbal character with notes of mint, citrus, and wild herbs. What Makes Transylvanian Linden Honey Special
Centuries of tradition, a 2 to 3 week bloom window, and one of Europe's rarest honey varieties.
Raw Linden Honey (3 x 280g, 840g total)
Linden honey comes from the nectar of linden trees (genus Tilia), known in the UK as lime trees. Despite the name, linden trees are not related to the lime fruit. They are the large, fragrant-flowering trees found throughout Central and Eastern Europe, traditionally associated with apothecary and folk medicine across the region.
Our Linden honey is harvested from our family apiaries in the Transylvanian forests where linden trees grow prolifically along riverbanks and in mixed woodland. The bloom lasts only 2 to 3 weeks each summer, and the harvest happens entirely within that narrow window. It is cold-extracted, unfiltered, and bottled exactly as the bees made it.
Linden honey is one of the rarest and hardest to find in the UK market in genuinely raw, single-origin form. Most Linden honey sold in Britain is blended or heat-processed. Ours is neither.

Linden Honey Chamomile Infusion
Ingredients
- 1 chamomile tea bag or 1 tsp dried chamomile
- 250ml freshly boiled water (cooled slightly)
- 1 teaspoon Linden honey
- Optional: thin slice of lemon
- Optional: small sprig of fresh mint
Method
- Place chamomile in a cup. Pour over hot (not boiling) water.
- Cover and steep for 5 minutes to extract the full aroma.
- Remove tea bag. Let cool for 1 minute to protect the honey's enzymes.
- Stir in Linden honey until fully dissolved.
- Add lemon or mint if desired. Sip slowly.
Lemon, Ginger and Linden Honey Soother
Ingredients
- Thumb-sized piece of fresh ginger, sliced
- Juice of half a lemon
- Thin lemon slice for garnish
- 250ml boiling water
- 2 teaspoons Linden honey
- Optional: small pinch of cayenne pepper
Method
- Place ginger slices in a mug. Pour over boiling water.
- Steep for 5 minutes to draw out the ginger warmth.
- Add lemon juice and stir. Let cool slightly.
- Stir in Linden honey when the liquid is warm, not scalding.
- Add lemon slice and a pinch of cayenne if using. Sip slowly.
Fresh Ricotta with Linden Honey and Pistachios
Ingredients
- 200g fresh ricotta, drained
- 2 tablespoons Linden honey
- 30g shelled pistachios, roughly chopped
- Zest of half a lemon
- Fresh mint leaves (optional)
Method
- Spoon ricotta onto two plates or shallow bowls.
- Drizzle Linden honey generously across the surface.
- Scatter chopped pistachios and lemon zest over the top.
- Finish with a few fresh mint leaves if desired.
- Serve immediately with a spoon or crusty bread on the side.
