What Is Soft Set Honey, Really?
Soft Set is not a separate type of honey. It starts as our raw British Wildflower and becomes Soft Set through a process called controlled crystallisation. A small amount of already-crystallised honey is folded into the fresh harvest as a "seed", and the whole batch is slowly stirred at cool temperatures over several days. The result is a uniform, fine-crystal honey that sits in the jar like soft butter rather than liquid.
Crucially, no heat is used. The process is purely mechanical and temperature-controlled. The natural enzymes, antioxidants, pollen, and propolis that define raw honey are all preserved. You get the full nutritional profile of raw Wildflower in a format that is dramatically easier to use day-to-day.

Origin & provenance
From the English Midlands
Our Soft Set honey comes from SALSA-certified beekeepers working across the English Midlands, the same named region that supplies our British Wildflower. Hives sit among farmland, hedgerows, and mixed meadow, giving the honey a genuinely multi-floral character that changes subtly from year to year based on which plants bloomed most heavily that season.
Every jar carries a GS1 barcode and specifies the country of origin as British. Unlike imported honey often labelled with vague "blend of EU and non-EU honeys" disclosures, our Soft Set is fully traceable to a named UK region and a SALSA-certified supply chain. Our British honey supplier holds SALSA Certification, meeting food safety standards beyond the UK minimum regulatory requirements.

Natural properties
The Properties of Raw Soft Set Honey
Because no heat is used in the crystallisation process, Soft Set retains the full raw nutritional profile of the Wildflower base.
Enzymes fully preserved
Unlike factory-set or heat-thinned honeys, our controlled crystallisation process uses no heat. The natural enzymes (including glucose oxidase, which produces small amounts of hydrogen peroxide) are preserved in full.
Multi-floral antioxidants
The British Wildflower base gives Soft Set a varied natural polyphenol and flavonoid profile, drawn from many flowering plants across the harvest season. Research consistently finds raw honeys carry higher antioxidant concentrations than pasteurised alternatives.
Natural pollen intact
Ultra-filtration (used to keep supermarket honey permanently liquid) removes pollen. Our Soft Set is only coarsely strained to remove wax, so natural pollen remains in the jar, keeping origin verifiable by independent lab analysis.
Distinct from refined sugar

Eight Ways to Use Soft Set Every Day
Soft Set shines wherever liquid honey makes a mess. Which is almost everywhere.
On toast and crumpets
The classic Soft Set use. Spreads across hot toast without running, works on cold crumpets without pooling. Butter first if you like, or alone on sourdough.
Incorporé au porridge
Drop a spoonful into hot porridge once it's off the heat (not boiling, which damages raw enzymes). Melts cleanly without gluey clumping.
With breakfast yoghurt
Plain Greek yoghurt, granola, and a dollop of Soft Set. Creamy-on-creamy texture. Much cleaner than liquid honey drizzled on top.
In baking
Substitute for butter or jam in cake fillings, scone toppings, or Welsh cakes. Adds sweetness and moisture without thinning the batter.
With soft cheese
Spread on toasted sourdough, top with ricotta or fresh goat cheese. The textures complement each other. A quick upgrade to a ploughman's plate.
On pancakes and waffles
A dollop in the centre of a hot stack. Melts slowly through, unlike syrup which runs off. Works particularly well with buttermilk pancakes.
In sandwich spreads
