À propos de ce miel
Why Acacia Honey Stays Liquid
Most raw honeys crystallise within weeks of extraction. Acacia is the exception. It has an unusually high fructose-to-glucose ratio compared to other varieties, and it is glucose, not fructose, that drives crystallisation. A honey heavy in fructose can remain liquid and pourable for six months or more without any heating, blending, or processing.
For everyday kitchen use, this matters more than it sounds. You do not need a warm water bath to soften the jar. A thin drizzle pours straight out of the jar into a cup of tea, a smoothie, or a salad dressing at any time of year. For people new to raw honey, Acacia is the easiest first step because it behaves like the honey they are used to from supermarkets, just without the pasteurisation, ultra-filtering, or blending.
If your jar does eventually crystallise, that is a sign of authenticity, not a fault. Place the closed jar in warm water (no hotter than 40°C) for 15 to 20 minutes to restore its natural liquid state. Origin & provenance
De nos ruchers familiaux à Transylvania
Our Acacia Honey is harvested from the Nistor family apiaries in Transylvania, Romania. This is not a vague claim of European origin. These are hives our founder's family has managed for over six generations, set among the acacia forests that make this region one of the world's most celebrated sources of monofloral acacia honey.
The Transylvanian landscape is characterised by clean air, unpolluted soils, and vast expanses of forest and meadowland far from industrial agriculture. The black locust trees (Robinier faux-acacia) that bloom here each late spring produce nectar of exceptional purity. The harvest window is brief, usually May into June, and every jar in the subscription comes from that window, extracted without heat and bottled without blending.

Why subscribe to acacia
Why Acacia Is the Default Subscription Choice
Different honeys suit different use patterns. Acacia is the one you reach for daily.
1
Daily everyday use
Tea, coffee, toast, smoothies, yoghurt, dressings. Acacia's mild, clean character works anywhere. Households finish a 280g jar in 4 to 6 weeks of regular use.
2
Kid and palate friendly
Mild enough for children over one year, refined enough for anyone who finds bold honeys too intense. The diplomatic choice for mixed households.
3
Always pourable
Stays liquid longer than any other honey in our range. No warming needed to drizzle from the jar. Ready to use, every time.
4
Lowest allergenic profile
Acacia flowers produce relatively low pollen. Many people who find darker, more complex honeys difficult to tolerate can enjoy raw Acacia without trouble.
5
Save 20% vs single jars
Subscription price is £8.79 per jar versus £10.99 one-time. Applied automatically to every delivery for as long as you subscribe.

Natural properties
The Properties of Raw Acacia Honey
Raw Acacia retains its full natural composition because it is never heated above hive temperature. The properties below are present only in raw, unprocessed honey.
Natural antioxidants
Raw Acacia contains flavonoids and polyphenols that act as natural antioxidants. Lighter in concentration than darker honeys like Heather, but significantly higher than pasteurised alternatives, which lose these compounds through heat treatment.
Lower glycaemic index
Acacia has one of the lowest glycaemic indexes of any honey, due to its high fructose and low glucose content. Often chosen by those monitoring blood sugar, though honey remains a sugar and should be consumed in moderation.
Antibacterial activity
Like all raw honey, Acacia contains hydrogen-peroxide-producing enzymes (glucose oxidase) that give it natural antibacterial properties. These enzymes are only present in raw honey and are destroyed by pasteurisation and high-temperature processing.
Soothing for sore throats
Acacia has traditionally been used to soothe sore throats and mild coughs. Its smooth, coating texture and natural antibacterial compounds make it effective when dissolved in warm (not boiling) water or tea. The NHS recognises honey as a natural soothing agent for adult cough symptoms.
The information above is for educational purposes only and does not constitute medical advice. Raw honey is not recommended for children under 12 months due to the rare risk of infant botulism. If you have a medical condition or are pregnant, consult your GP before making dietary changes.
How to use it
Eight Ways to Use Acacia Every Day
The most versatile honey in our range. Here is where it earns its place in your kitchen.
In tea and hot drinks
The first-choice honey for sweetening tea. Stir in once your drink has cooled slightly to preserve enzymes. Works with green, black, and herbal teas alike.
In smoothies and shakes
A teaspoon blended with fruit, milk, or protein. Stays liquid so it integrates immediately with no grit or clumping. The cleanest sweetener for post-workout drinks.
On toast and crumpets
Drizzle directly on warm toast, crumpets, or crusty bread. Its liquid consistency makes precise portioning easy. Works particularly well with salted butter.
Over Greek yoghurt
Plain Greek yoghurt with fresh berries and a small drizzle of Acacia. The mildest honey for the creamiest dairy. Lets the yoghurt lead.
In salad dressings
Whisk Acacia with olive oil, Dijon, and lemon juice. Stays pourable straight from the jar. The default summer vinaigrette sweetener.
With soft cheeses
Drizzle over ricotta, brie, camembert, or fresh goat cheese. Its subtle sweetness complements without competing. A 10-second cheese-course upgrade.
In honey lemon water
Warm water, fresh lemon juice, and a teaspoon of Acacia. A traditional gentle morning ritual. Mix into warm rather than hot water to preserve the raw honey.
Baking and cooking
A clean substitute for refined sugar. The neutral flavour does not alter the final taste, ideal for recipes where you want sweetness without honey character coming through.
What sets it apart
Raw Acacia vs Supermarket Acacia
Most supermarket Acacia is pasteurised, ultra-filtered, and blended from multiple countries. Raw, single-origin Transylvanian Acacia is a different product entirely.
HoneyBee & Co. Raw Acacia
- Never heated in processing. Extraite à froid pour préserver les enzymes, le pollen et les antioxydants.
- Single-origin Transylvania. From the Nistor family apiaries. One harvest window, one provenance.
- Minimally filtered. Natural pollen stays in the jar, keeping origin verifiable.
- Traçabilité totale. Every jar carries a GS1 barcode and the harvest details on the label.
Typical supermarket Acacia
- Pasteurisé. Heated to 70 degrees or more, destroying enzymes and changing flavour.
- Mélangé. Multiple countries of origin combined into one anonymous jar.
- Ultra-filtré. Pollen removed, making origin impossible to verify by lab analysis.
- Souvent falsifiés. Independent studies have found added sugar syrups in a significant share of imported honey.
