Why does sunflower honey set so quickly?

A High Glucose Ratio. A Fine Fondant-Like Texture.

Sunflower honey is naturally high in glucose relative to fructose. Glucose is less soluble than fructose, so it crystallises faster and in finer, more uniform crystals. The result is a honey that sets within weeks into a smooth, spreadable, fondant-like cream. This is not a fault. It is what makes sunflower honey particularly good for spreading and for baking. Origin & Terroir

From the Sunflower Belts of Transylvania

Our Sunflower Honey comes from our family apiaries in Transylvania. When the linden bloom fades in July, our beekeepers move the hives to the sunflower belts in the plains where vast fields of Helianthus annuus come into flower for the late-summer harvest. The bees work these fields for four to six weeks, returning to the hives laden with golden nectar that carries the warmth of the Balkan summer.

Hot, dry summers bring strong aroma and deeper amber colour. Cooler, wetter summers yield paler, gentler batches. Either way, sunflower honey is one of the most dependable and consistent honeys we produce. It is always golden, always warmly sweet, and always quick to set into its distinctive creamy texture.

HoneyBee & Co. was founded by Dragos Nistor, whose family has kept bees for over six generations in Transylvania. Our Sunflower Honey comes directly from these family apiaries. The beekeepers are our relatives. The sunflower fields are the same ones our grandparents moved hives to season after season.

Every batch of sunflower honey is independently analysed for moisture, HMF (a heat-damage marker), diastase (an enzyme indicator of freshness), and pollen profile to verify the floral source. Our moisture content sits between 15 and 19%, which keeps flavour and texture stable without any artificial intervention.

What does Sunflower honey taste like?

Sunflower honey is warmly sweet with buttery, caramelised undertones and subtle nutty notes on the finish. It is bright golden in colour, with a fresh floral aroma. More characterful than Acacia but less intense than Heather. The most approachable honey in our range, and the easiest for daily use.

Why is my Sunflower honey set and creamy, not runny?

Because it is raw and naturally high in glucose. Sunflower honey crystallises faster than any other honey in our range. The fine, fondant-like cream you see in the jar is the honey in its natural state, just as it leaves the hive. Mass-produced sunflower honey is often re-heated to dissolve the crystals before repackaging, which destroys the enzymes and flavour. Ours is not. Learn more about why raw honey crystallises.

How do I make Sunflower honey runny again?

Stand the closed jar in a bowl of warm water (no hotter than 40°C) for 15 to 20 minutes. Stir gently once or twice. The honey will loosen to a runnier consistency. Do not microwave. Do not use boiling water. Any temperature above 40°C begins to destroy the natural enzymes. Note that Sunflower will re-crystallise again after a few weeks, which is normal.

Is your Sunflower honey raw and unpasteurised?

Yes. Our Transylvanian Sunflower Honey is cold-extracted and never heated above natural hive temperature (around 35°C). It is not pasteurised, not ultra-filtered, and not blended with other honeys. Every jar retains its natural enzymes, pollen, antioxidants, and aromatic compounds intact.

Can I use Sunflower honey in baking?

Yes, and it is arguably the best honey in our range for baking. The warm caramelised character holds its flavour through oven heat, where delicate honeys like Acacia fade. Use it in breads, flapjacks, ginger biscuits, and spice cakes. Replace refined sugar at roughly a three-quarter ratio (honey is sweeter than sugar) and reduce other liquids slightly to balance.
