Six Ways to Use British Heather Honey
Bold and rare. Use generously where you want honey to make a statement.
In hot honey and lemon
The classic British remedy for sore throats. Hot water (not boiling), fresh lemon juice, a generous spoonful. The NHS suggests hot honey and lemon as a home remedy for coughs in adults and children over one year old.
With blue and aged cheese
Heather and Stilton is one of the great cheese pairings. Also exceptional with Roquefort, gorgonzola, aged cheddar, manchego, and pecorino.
In a hot toddy
Whisky, hot water, lemon, cloves, and a generous spoonful of Heather. The traditional Scottish remedy and winter nightcap. Adults only.
Heather glaze on roast lamb
Brush onto roast lamb in the last 10 minutes of cooking. The bold floral character cuts through rich meat and creates a glossy caramelised crust.
In strong black tea
Better than sugar in English Breakfast, Earl Grey, or Yorkshire tea. Heather can stand up to bold black tea where mild honeys disappear entirely.
Drizzled over panna cotta or yoghurt
Heather adds floral depth and visual drama to white desserts. A small spoonful elevates panna cotta, vanilla ice cream, or thick Greek yoghurt.

Heather honey's jelly-like (thixotropic) texture means it cannot be spun out of the comb like other honeys. It must be pressed or agitated by hand. Genuinely artisan.

Our story begins in the forests and meadows of Transylvania, where the Nistor family has tended bees for six generations. Same hives, same flora, same craft - passed from grandfather to grandson, mother to daughter.
Founder Dragos Nistor brought that tradition to Britain and built it out from there - partnering with British beekeepers in Yorkshire and the English Midlands whose work meets the same exacting standards: raw, unblended, traceable, and ethical.
