Acacia Honey
Pale gold, crystal clear, mild and delicate. Stays liquid thanks to high fructose. Perfect in tea or drizzled over yoghurt.
Notes: vanilla, clean sweetness, floral
Yorkshire Moors, Britain
British Heather Honey
Dark amber with floral intensity and a thixotropic, jelly-like texture. Our boldest honey. Harvested once a year in late summer.
Notes: warm, woody, deep floral
English Midlands, Britain
British Soft Set Honey
Creamy, smooth, and perfectly spreadable. Naturally crystallised to a buttery consistency. The breakfast favourite for toast, crumpets, and fresh bread.
Notes: mild, buttery, clean finish
Product images are indicative. Natural raw honey varies in colour and texture by batch and season - that variation is the signature of authentic single-origin honey.
The pairing guide
How to Build a Honey and Cheese Board
Three honeys, three roles. Here is how to pair each one for the perfect cheese board spread.
Acacia with soft cheeses
Drizzle Acacia directly over a wedge of brie, a round of camembert, or a log of goat cheese. Its pale, clean sweetness lifts creamy, mild cheeses without competing. Serve the brie at room temperature for the best pairing. Acacia also works as a contrast partner on a blue cheese board: see our full guide to Acacia honey and blue cheese pairings.
Heather with blue and aged cheeses
Spoon a little Heather alongside Stilton, Roquefort, or gorgonzola. The honey's bold intensity matches the pungent, salty character of blue cheese. Also excellent with a chunk of 18-month aged cheddar or manchego.
Soft Set on crackers and bread
Spread Soft Set directly onto oatcakes, water biscuits, or sliced baguette. It acts as a sweet base for any cheese you stack on top. Particularly good with semi-hard cheeses like Comte, Gruyere, or Red Leicester.
Wine pairings
Acacia and soft cheese with a dry white or Champagne. Heather and blue cheese with a sweet dessert wine or port. Soft Set and cheddar with a full-bodied red. The honey bridges the gap between cheese and wine flavours.
Board styling tips
Place all three honeys in small ramekins or pour from the jar. Add walnuts, fresh grapes, dried figs, and sliced apple alongside the cheeses. Arrange with a mix of textures and colours for visual impact.
Beyond cheese boards
These three honeys also work for baked brie (Acacia drizzled before serving), honey-glazed nuts (Heather with rosemary and walnuts), and charcuterie (Soft Set alongside cured meats and cornichons).
Why this selection
Why These Three for Cheese?
We chose this combination to cover every cheese type and every serving style on a single board.
1
Mild, Bold, and Spreadable
Acacia is the gentle drizzle for soft cheeses. Heather is the intense companion for strong cheeses. Soft Set is the versatile spread for crackers and bread. One trio covers every pairing on the board.
2
Three Different Textures
Liquid Acacia drizzles elegantly. Jelly-like Heather sits in a ramekin for spooning. Creamy Soft Set spreads with a knife. Guests interact with each honey differently, which makes the board more interesting.
3
A Conversation Starter
Three visually distinct honeys (pale gold, dark amber, creamy white) create an eye-catching display. Guests naturally want to taste each one with different cheeses, turning a cheese board into a tasting experience.

What Sets It Apart
Raw Honey vs Supermarket Honey
Not all honey is the same. Here is what sets ours apart.
HoneyBee & Co. Raw Honey
- Never heated. Cold-extracted to preserve natural enzymes, pollen, and antioxidants.
- Never blended. Single-origin from one geographical location with full traceability.
- Minimal filtering. Natural pollen and beneficial compounds stay in the jar.
- Fully traceable. Every batch tracked from hive to jar. Our British honey supplier holds SALSA Certification.
Typical supermarket honey
- Pasteurised. Heated to 70 degrees or more, destroying natural enzymes.
- Blended. "Blend of EU and non-EU honeys" with zero traceability.
- Ultra-filtered. Pollen removed entirely, making origin impossible to verify.
- Often adulterated. Some imported honeys contain added sugar syrups.
Six Generations. Two Countries.
From our family to yours.
Our story begins in the forests and meadows of Transylvania, where the Nistor family has tended bees for six generations. Same hives, same flora, same craft - passed from grandfather to grandson, mother to daughter.
Founder Dragos Nistor brought that tradition to Britain and built it out from there - partnering with British beekeepers in Yorkshire and the English Midlands whose work meets the same exacting standards: raw, unblended, traceable, and ethical.
Whether the jar in your hand came from our family hives or from one of our British partners, the standard is the same: raw, unblended, traceable, and ethical.
