About This Honey
What Makes Transylvanian Raw Acacia Honey Different
Raw acacia honey from Transylvania is widely regarded as the world's finest monofloral acacia honey. The Robinia pseudoacacia trees that bloom across the Transylvanian hills each spring produce nectar of exceptional purity. The cold mountain air, unpolluted soils, and vast forest coverage create conditions that mass-produced acacia honey cannot replicate.
Our acacia honey is cold-extracted from our own family apiaries — hives our family has managed for over six generations. It is never heated above hive temperature, never pasteurised, and never blended. Every enzyme, antioxidant, and flavour compound remains intact from hive to jar.
The result is a honey with crystal-clear pale gold colour, a delicate floral aroma, and clean vanilla sweetness that lingers gently. Mild enough for children. Refined enough for the most discerning palate.
Flavour Profile
Delicate, clean, and subtly floral with a light vanilla note. The mildest honey in our range. Stays naturally liquid for months due to its exceptionally high fructose content.
Origin
Our family apiaries, Transylvania, Romania. The same hives managed by Dragos Nistor's family for over six generations. GS1 barcoded for full origin verification.
Best Used For
Tea, herbal infusions, porridge, yoghurt, baking, everyday sweetening. Ideal for children. The most versatile raw honey for daily use.
Crystallisation
Stays liquid the longest of all our varieties. High fructose content means it may remain runny for 12 months or more. If it sets, warm gently in water below 40°C.

Propriétés naturelles
Why Raw Acacia Honey Stands Apart
Raw acacia honey retains its full natural composition because it is never heated above hive temperature. These properties are present only in raw, unheated honey.
Naturally Low Allergenic
Acacia flowers produce relatively low amounts of pollen compared to most flowering plants. This makes raw acacia honey one of the least allergenic honey varieties, suitable for the widest range of people.
Source: National Library of Medicine ↗Naturally High Fructose
Acacia honey has an unusually high fructose-to-glucose ratio. Fructose has a lower glycaemic index than glucose. Raw acacia honey is widely regarded as the most suitable honey for those monitoring blood sugar, though it remains a sugar and should be consumed in moderation.
Source: NHS ↗Natural Antioxidants
Raw honey contains naturally occurring polyphenols and flavonoids. Research suggests these compounds are significantly reduced by heat treatment. Raw acacia honey retains them fully because it is never pasteurised.
Source: National Library of Medicine ↗For educational purposes only. Not medical advice. Raw honey is not suitable for children under 12 months.
The Source
Our Family Apiaries. Six Generations. Transylvania.
HoneyBee & Co. founder Dragos Nistor grew up in Transylvania watching his father and grandfather tend hives in the acacia forests. The same family apiaries that produced honey for his grandparents still produce our raw acacia honey today.
Every jar carries a GS1 barcode. Scan it to verify the Romanian origin. This is not a vague "blend of EU honeys" claim. This is a specific family, a specific set of hives, a specific landscape. Traceable to the source.
