From Lemon Groves Above the Mediterranean
The Amalfi Coast in southern Italy is one of the most distinctive lemon-growing regions on earth. Its terraced groves climb the cliffs above the sea, sheltered by mountains and warmed by a microclimate that has supported citrus cultivation for centuries. The signature variety, the Sfusato Amalfitano, holds Protected Geographical Indication status from the European Union and is the lemon at the heart of Limoncello DOP.
This is the landscape where our Lemon Blossom Honey will be harvested. We work with trusted family beekeepers whose hives are placed within the lemon groves themselves, so the bees forage almost exclusively on the white blossoms of the Sfusato lemon trees during the spring flowering. The result is a true monofloral honey: produced by bees collecting nectar from a single species of plant, in a single landscape, in a single short window each year.

Tasting Notes
What to Expect From Each Spoonful
Lemon Blossom Honey is best understood as one of the lighter, more delicate raw honeys. It will not punch like a Heather or carry the malty depth of a dark wildflower. Its character is closer to our Acacia and Linden: pale, refined, and unmistakably floral.
Colour
Pale Amber
A clear, light golden liquid when fresh. Some batches show a faint greenish undertone characteristic of citrus blossom honeys.
Aroma
Soft Citrus
Distinctly aromatic, with the soft floral sweetness of lemon blossom and a quiet citrus undertone in the finish.
Texture
Smooth, Slow Set
Liquid and pourable when fresh. Crystallises slowly over many months to a fine, pale set; gentle warming returns it to liquid.
Properties
Naturally Rich in Vitamins and Minerals
Lemon Blossom Honey is sometimes called citrus blossom honey, and it shares the broad nutritional profile of other monofloral citrus honeys. As with every honey we sell, the precise composition varies by harvest, by colony, and by the year's weather, but a few characteristics are consistent.
Researchers studying honey for cough and throat soothing have published evidence that natural honey may rival some over-the-counter remedies in mild cases. A peer-reviewed PubMed-indexed study on honey and paediatric cough remains a useful reference point.
Vitamins C and B-complex
Naturally contains vitamin C, B3, B5, and B9 in the trace amounts characteristic of raw monofloral citrus honeys.
Fructose and Glucose
Like all honey, predominantly fructose and glucose with smaller amounts of sucrose and maltose. A natural alternative to refined sugar.
Minerals Including Potassium
Citrus blossom honeys are typically richer in potassium than many other monofloral varieties.
Antioxidants and Enzymes
Raw and unpasteurised, retaining the natural enzymes and antioxidant compounds destroyed by heat above 40°C.
Trace Caffeine
Citrus honeys are unusual in containing measurable trace caffeine, around 4mg per kilo. Far too little to affect sleep, but a fascinating quirk of the variety.

Adding a new honey to the HoneyBee & Co. range is not something we do lightly. We are six generations into beekeeping in our family, and that history sits in every jar we ship. A new origin only joins the range when we are confident the supplier shares our standards on hive welfare, harvesting practice, and traceability.
Lemon Blossom Honey is a rare, single-harvest variety. The Sfusato Amalfitano flowers in spring, the bees forage for a matter of weeks, and the harvest window closes quickly. We are working through the practicalities of partnership, food safety documentation, and import logistics so the honey reaches you exactly as intended: raw, unpasteurised, and traceable to the grove.
