Every jar in your subscription is harvested from the Nistor family apiaries in Transylvania, Romania. Six generations of family beekeeping, single-origin harvests, one provenance that never changes from one delivery to the next.

Thixotropic - the rare honey
Heather is one of only two honeys in the world (alongside Manuka) that are thixotropic: the honey gels in the comb and is harvested differently to other varieties. The result is a denser, more complex texture and an exceptional micronutrient density.
Raw, never heated
Heather is rich in trace minerals (manganese, iron, magnesium) drawn from the upland soil. Heating destroys the enzyme load and the structural gel. Our Heather is cold-extracted from the comb and never heated above hive temperature.

What sets it apart
Raw Heather vs Supermarket Heather
True single-origin Heather is rare - the harvest is small, the bees are difficult, the honey is hard to extract. Most supermarket "heather honey" is a blend of cheaper honeys with a small percentage of true heather, sometimes pasteurised. Raw single-origin Heather is a different product entirely.
