Linden has a distinctive minty, slightly herbal character traditionally taken with chamomile, herbal teas, or warm milk. In Eastern Europe it is the household honey for winding down. A teaspoon at the end of the day.

Where the Honey in Your Subscription Comes From
Every jar in your subscription is harvested from the Nistor family apiaries in Transylvania, Romania. Six generations of family beekeeping, single-origin harvests, one provenance that never changes from one delivery to the next.

Aromatic compounds
Linden honey is rich in farnesol, terpenes, and other volatile aromatic compounds drawn from lime tree (Tilia cordata) blossom. These give the honey its distinctive minty-eucalyptus character that no other honey replicates.
Raw, never heated
Linden contains the highest aromatic compound load of any honey we sell. Heat destroys these volatiles entirely, which is why supermarket Linden tastes flat. Our Linden is cold-extracted and never heated above hive temperature.

Raw Linden vs Supermarket Linden
Most supermarket Linden is pasteurised (which kills the volatile aromatics that make Linden Linden), ultra-filtered, and often blended with cheaper honeys. Raw, single-origin Transylvanian Linden is a different product entirely.
