Our Soft Set honey begins as pure raw British wildflower honey, hand-harvested by independent beekeepers across the Midlands. The bees forage on clover, bramble, hawthorn, and the diverse hedgerow flora of the region. Nothing about this starting point changes.

The transformation comes later and is about texture, not composition. A small portion of the same honey, already finely crystallised, is reintroduced as a seed. The batch is then held at low temperatures (below 14C) and gently mixed over several days, guiding the natural crystallisation pattern into a fine, uniform texture. No heat is ever applied.
