The transformation comes later and is about texture, not composition. A small portion of the same honey, already finely crystallised, is reintroduced as a seed. The batch is then held at low temperatures (below 14C) and gently mixed over several days, guiding the natural crystallisation pattern into a fine, uniform texture. No heat is ever applied.
