Our Linden honey is one of the rarest honey varieties we sell, and one of the most traditionally valued in Central European history. Harvested once a year from the brief 2 to 3 week linden bloom in our family's Transylvanian forests. Known as lime blossom honey across Britain and Europe, it carries a delicately herbal character with notes of mint, citrus, and wild herbs. Cold-extracted, unfiltered, and rare to find in genuinely raw, single-origin form in the UK. Three jars is how our regulars keep herbal tea sweetened all year.

About this honey

What Makes Transylvanian Linden Honey Special

Centuries of tradition, a 2 to 3 week bloom window, and one of Europe's rarest honey varieties.

Transylvania, Roumanie

Raw Linden Honey (3 x 280g, 840g total)

Linden honey comes from the nectar of linden trees (genus Tilia), known in the UK as lime trees. Despite the name, linden trees are not related to the lime fruit. They are the large, fragrant-flowering trees found throughout Central and Eastern Europe, traditionally associated with apothecary and folk medicine across the region.

Our Linden honey is harvested from our family apiaries in the Transylvanian forests where linden trees grow prolifically along riverbanks and in mixed woodland. The bloom lasts only 2 to 3 weeks each summer, and the harvest happens entirely within that narrow window. It is cold-extracted, unfiltered, and bottled exactly as the bees made it.

Linden honey is one of the rarest and hardest to find in the UK market in genuinely raw, single-origin form. Most Linden honey sold in Britain is blended or heat-processed. Ours is neither.

How to enjoy

Six Ways to Use Linden Honey

The herbal tea honey. The apothecary honey. Europe's most traditional sweetener.

🍵

In herbal teas

The classic pairing. Linden honey with chamomile, lime blossom, or lemon balm tea. The honey's own herbal character deepens the infusion without fighting it. This is Linden's true home.

🥑

Lemon and ginger drinks

Fresh ginger, sliced lemon, hot water, and a spoon of Linden honey. A traditional Central European remedy for winter chills. The citrus notes in the honey lift the drink naturally.

🥚

Drizzled over fresh ricotta or soft cheese

The herbal-minty complexity of Linden pairs beautifully with fresh, mild cheeses. Try it on ricotta with crushed pistachios, or on burrata with black pepper.

🍏

Over poached pears or stewed fruit

Linden's delicate character works with subtle, gentle desserts rather than rich ones. Poached pears, warm stewed apples with cinnamon, or honey-glazed figs.

🥜

In warm milk or a bedtime drink

Traditionally regarded in Central European folk medicine as a soothing evening drink. A teaspoon of Linden in warm milk before bed is a pairing that goes back generations.

🪵

Straight from the spoon

A teaspoon straight is the classic traditional use. Morning or before bed. For understanding what Linden actually tastes like, nothing beats a simple spoonful.

Why stock up

Why Three Jars of Linden?

The rarest honey in our range, and one of the hardest to find in the UK.

One of Europe's Rarest Honeys

Linden honey is difficult to find in the UK in genuinely raw, single-origin form. Most supermarket Linden is blended or heat-processed. Ours is neither. When our batch sells out, it is gone until next summer.

The Classic Herbal Tea Honey

If you drink herbal tea regularly, chamomile, lime blossom, lemon balm, peppermint, Linden is the traditional pairing. Three jars carries daily tea drinkers through six months or more.

Just 2 to 3 Week Bloom Window

Linden trees bloom for a very brief period each summer. The harvest happens entirely within that window. No shortcuts, no substitutes. Every jar is the result of one short season's work.

Six Generations of Family Beekeeping

Our Linden comes from our family apiaries in Transylvania, where six generations of Nistor beekeepers have worked the same land. Three jars supports a genuinely heritage operation.

Provenance

From Transylvanian Linden Forests to Your Cupboard

Family apiaries. Wild linden woodland. A 2 to 3 week harvest window.

Linden honey has been collected and used in Central European folk medicine and culinary tradition for centuries. In Romania, Hungary, and across the Balkans, it is regarded as one of the most valuable honey varieties, prized for its distinctive herbal flavour and the brief annual window in which it can be harvested.

Our Linden comes from our family apiaries in Transylvania, where linden trees grow prolifically along riverbanks and in mixed forest. The harvest happens during the short summer bloom window, entirely within 2 to 3 weeks. The honey is cold-extracted, minimally processed, and bottled exactly as the bees produced it. Honey vs sugar

Why Linden Beats Refined Sugar

Raw Linden honey is one of the most nutritionally rich varieties we offer, naturally containing vitamins, beneficial minerals, and active enzymes. It has been traditionally valued in Central European folk medicine for its distinctive flavour and the compounds it contains. Honey is still classified as a free sugar and should be used in moderation, but where you would otherwise reach for refined sugar, particularly in herbal teas and warm drinks, raw Linden brings both flavour and genuine character for the same sweetness.

What the research says

Linden Honey, Briefly

What we know, what is promising, and what is still being studied.

Naturally Rich in Active Compounds

Linden honey is one of the most nutritionally rich varieties we offer, naturally containing vitamins alongside beneficial minerals and active enzymes. The specific compounds reflect the herbal profile of linden nectar.

Traditional Folk Medicine Use

In Central and Eastern European folk medicine, Linden has been regarded for centuries as a soothing honey used in warm drinks during seasonal colds. Modern evidence for specific claims varies; traditional use is well documented.

Raw Profile Retained

Because our Linden is cold-extracted and never heated, it retains the naturally occurring enzymes, pollen, and antioxidants of raw honey. Heat processing, which is common in commercial linden honey, typically destroys these.

A Moderate, Mindful Sweetener

Honey should be used in moderation and is classified as a free sugar. Where you are already using a sweetener, particularly in tea and warm drinks, choosing raw Linden gives you more character and a traditional pairing for the same sweetness.

This information is general and not medical advice. Honey should not be given to children under 12 months. If you have diabetes, severe allergies, or are managing blood sugar, consult your GP before significantly changing your diet.

Questions courantes

Questions fréquemment posées

Is Linden honey the same as lime blossom honey?
Yes. Linden is the name used in Continental Europe for the Tilia genus of trees. In the UK, the same trees are commonly called lime trees, so the honey is sometimes called lime blossom honey or lime tree honey. It has no relation to the lime fruit. The names describe the same honey.
What does Linden honey taste like?
Uniquely herbal and minty, quite unlike any other honey variety. Delicate but characterful, with notes of mint, citrus, lime blossom, and wild herbs. A clean, persistent finish. Not as mild as acacia, not as floral as wildflower, and not as bold as heather, a distinct middle ground, complex but not overwhelming.
Why is raw Linden honey hard to find in the UK?
Linden trees bloom for only 2 to 3 weeks each summer, so harvest windows are short and yields vary year to year. Most commercial linden honey sold in the UK is blended with honey from multiple countries or heat-processed for stability. Genuinely raw, single-origin Linden from a named source is rare. Ours comes from our family apiaries in Transylvania.
Will Linden honey crystallise?
Yes, naturally and at a medium pace. Linden has a balanced glucose-fructose ratio, which means it sets into a fine, pale amber crystal over time. This is a sign of raw, unprocessed honey, not a fault. If you prefer it liquid, warm the closed jar in warm water below 40C for 10 to 20 minutes.
How is this different from supermarket linden honey?
Supermarket linden is typically blended from multiple countries, often heat-treated, and ultra-filtered for stability. Ours is single-origin raw honey from our family apiaries in Transylvania, cold-extracted and unfiltered. The entire 2 to 3 week harvest window is what goes into the jar, nothing added, nothing removed.
How much honey is in this pack?
Three 280g jars, totalling 840g of raw Transylvanian Linden honey. Enough for six months or more if used daily in herbal tea, which is its most popular use.
Can I subscribe to this pack?
Yes. Subscribe and save 20%. Monthly or every three months. Given the limited annual harvest, subscription is the safest way to secure supply.
How should I store it?
Room temperature, away from direct sunlight. Do not refrigerate. Warm the closed jar in warm water below 40C for 10 to 20 minutes if it sets and you prefer it runny. Never microwave or boil, heat above 40C destroys the enzymes and antioxidants that make raw honey special.
