The Real Honey Question

Most Honey on UK Shelves Is Not What You Think

In March 2023, the European Commission's Joint Research Centre tested 320 batches of honey arriving at EU borders. Forty-six percent were flagged as suspected of being adulterated with sugar syrups. Here is the difference between what we sell and what most large brands sell.

Mass-Market Honey

Often blended,
often heated,
often anonymous.

  • Blended from multiple countries (typical label: "a blend of EU and non-EU honeys")
  • Pasteurised at 70°C or higher, which destroys natural enzymes
  • Ultra-filtered to remove pollen, which removes traceability
  • Engineered to stay liquid forever (a sign of processing, not quality)
  • The adulteration incentive is significant: imported honey averages €2.32 per kg in the EU, while sugar syrups cost as little as €0.40 per kg
  • 74% of suspicious consignments tested by the EU originated from China; 93% of samples from Turkey were flagged

HoneyBee & Co.

Single origin,
cold extracted,
traceable to a region.

  • Single-origin, single floral source. Acacia from Transylvania. Heather from the Yorkshire Moors.
  • Cold-extracted. Never heated above hive temperature (~40°C)
  • Pollen and natural enzymes preserved intact
  • Crystallises naturally over time, a reliable sign of authenticity
  • Six generations of beekeeping heritage in the Nistor family of Transylvania
  • Our British honey supplier holds SALSA Certification (Safe and Local Supplier Approval)

What Is Raw Honey, and Why Does It Matter?

01

Zuccheri ed enzimi naturali

Raw honey is mostly fructose and glucose, plus active enzymes the bees produce inside the hive. When honey is heated above 40°C, those enzymes are permanently destroyed. We never pasteurise.

02

Polline e antiossidanti

Every jar of raw honey retains natural pollen grains and antioxidants from the flowers the colony visited. These compounds give each honey its distinct flavour. They are absent in pasteurised honey.

03

Contenuto d'acqua e purezza

Our Acacia honey has a naturally low water content of 15 to 19%, which prevents fermentation. Many mass-produced honeys contain far more water, often a sign of over-dilution or harvesting too early.

04

Health Properties

Honey has been valued for thousands of years and features in folk medicine across cultures. Its natural antimicrobial properties come from enzymes that remain active only in raw, unheated honey.

Not all honey is the same. The colony's health, the flowers it forages, the beekeeper's harvesting methods, and whether the honey has been heated or filtered all determine what ends up in your jar. At HoneyBee & Co., every batch is fully traceable from hive to home. Read more about the most common myths about raw honey or learn why raw honey is good for you.

Il nostro patrimonio

Six Generations of Beekeeping in Transylvania

HoneyBee & Co. was born from a family legacy spanning more than six generations in the Acacia forests of Transylvania, Romania. Founder Dragos Nistor grew up watching his father Nistor Fanel and grandfather Nistor Grigore tend the family hives. They taught him that exceptional honey is never rushed, never heated, and never compromised.

Today, those same family hives in Transylvania produce our Acacia, Sunflower, and Linden honeys. Our British range, Heather, Wildflower, and Soft Set, is hand-harvested in small batches each season from the Yorkshire Moors and the rolling Midlands by our SALSA-certified British supplier.

Whether the honey comes from our Transylvanian family apiaries or our British supplier, every jar shares the same founding principle: the wellbeing of the bees comes first. We harvest only what the colony can spare, and never compromise on purity. This approach is why our honey was featured in Vogue’s Summer Hot List across three consecutive editions in summer 2024.

Buono a sapersi

Il miele ha cambiato consistenza. È un buon segno.

Crystallisation is not a flaw. It is one of the most reliable signs that your honey is raw, pure, and unprocessed. Supermarket honey is typically heated and ultra-filtered to prevent it from ever setting, a process that strips away the very compounds that make raw honey valuable. Our honey is never heated above natural hive temperatures, which means the glucose naturally present in the nectar will, over time, form crystals. This is chemistry, not contamination. For more on what is actually true about crystallised honey, read our guide to the most common myths and misconceptions about raw honey.

Miele di Erica

Struttura: Soda e tixotropica

Naturally the firmest in our range. Behaves like a soft gel in the jar and becomes more fluid when stirred. Spread on warm toast or stir into porridge where the warmth loosens it beautifully.

Set morbido Miele

Consistenza: Liscia e spalmabile

Intentionally crystallised through a controlled process that produces an ultra-fine, creamy consistency. The artisan alternative to butter, with a velvety spread every time.

Miele di fiori selvatici

Consistenza: Liquido, cristallizza nel tempo

Naturally runny when fresh. Over weeks or months it will set into a coarser crystalline texture. Both forms are normal. The flavour is unchanged.

Miele di acacia

Texture: Slow to crystallise

Acacia has the highest fructose-to-glucose ratio of any variety we stock, which is why it remains beautifully clear and liquid for longer than almost any other raw honey.

Miele di girasole

Texture: Crystallises quickly

High glucose content means it crystallises within weeks of jarring. The result is a firm, pale yellow set with a mild, clean flavour. Ideal for spreading and baking.

Miele di tiglio

Texture: Medium set

Sets to a soft, medium-textured crystal that is easy to spoon and mild on the palate. Lovely stirred into warm tea or drizzled over mild cheeses.

Tip
Come rendere nuovamente liquido il miele: Place the closed jar in a bowl of warm water (no hotter than 40°C) for 15 to 30 minutes, stirring gently once or twice. Never microwave. Never boil. Heat above 40°C destroys the enzymes and antioxidants that make raw honey special.

The Health Benefits of Raw Honey

Energia e nutrizione naturale

Raw honey provides a natural source of energy through its fructose and glucose content, along with trace vitamins and minerals that refined sugar entirely lacks. It contains small amounts of amino acids, organic acids, and antioxidant compounds that contribute to its broader nutritional profile.

Sostenere il sistema immunitario

Raw honey is naturally rich in flavonoids and antioxidants, bioactive compounds that may help support the body's natural defences. The enzyme glucose oxidase, present only in raw, unheated honey, produces hydrogen peroxide upon contact with moisture, which is why honey has featured in folk medicine and traditional wound care across human history.

Calma la tosse e favorisce la digestione

Honey is increasingly recognised as a natural option that may help soothe throat irritation and ease occasional coughs. It also acts as a prebiotic, meaning it may benefit gut health by encouraging the growth of beneficial bacteria. For a traditional remedy that combines two of the oldest natural soothers, see our guide to the health benefits of ginger and honey.

Il miele in una dieta equilibrata

Used as a natural sweetener in cooking, baking, and drinks, honey fits naturally into a balanced, health-conscious diet when consumed in moderate amounts. It can serve as a thoughtful substitute for refined sugars in recipes. For a closer look at how raw honey compares with industrial sweeteners, read syrups, sweeteners, and raw honey.

Risposte alle vostre domande

Frequently Asked Questions About Raw Honey

Il vostro miele è grezzo?
Yes. Every jar is raw and unpasteurised, cold-extracted and never heated above hive temperature (around 40°C). This preserves the natural enzymes, pollen, and antioxidants that make raw honey nutritionally valuable.
Is raw honey better than regular honey?
Raw honey retains its natural enzymes, pollen, and antioxidants because it is never pasteurised or ultra-filtered. Most supermarket honey is heated above 70°C, which destroys the enzyme glucose oxidase responsible for honey's natural antimicrobial properties. Raw honey also crystallises naturally, which is a sign of authenticity, not a flaw.
What is the best honey in the UK?
The best honey in the UK is single-origin, raw, and traceable to a named region. HoneyBee & Co. has been featured in three consecutive Vogue Summer Hot List editions in summer 2024, holds a SALSA-certified British supplier, and carries six generations of Transylvanian beekeeping heritage. Our British Heather honey from the Yorkshire Moors and Miele di acacia from Transylvania are among the most prized varieties available.
How do I know if honey is real?
Real honey will eventually crystallise. It has a single, named origin (a region or a beekeeper). It costs more than two pounds per jar. Its ingredient list says one word: honey. Vague labels such as "a blend of EU and non-EU honeys" are a warning sign. The European Commission's 2023 Joint Research Centre report found 46% of honey imports tested at EU borders were suspected of being adulterated. Read the source report.
How long does raw honey last?
Properly stored raw honey has an extraordinary shelf life. Jars of edible honey have been recovered from Egyptian tombs dating back over three thousand years. Store it sealed at room temperature, away from direct sunlight. There is no need to refrigerate. Crystallisation is normal and reversible by warming the jar in a bowl of warm water under 40°C.
Why does honey crystallise?
Crystallisation is a natural process where the glucose component of honey forms small crystals. It is one of the most reliable signs that honey is raw and unprocessed. Heated and ultra-filtered supermarket honey is engineered to stay liquid forever, but at the cost of destroying its enzymes. Different varieties crystallise at different rates: Miele di acacia stays liquid the longest because of its high fructose content, while Miele di girasole sets quickly because of its high glucose content.
Il vostro miele è inglese?
Il nostro Fiori selvatici, Set morbido e Heather honeys are British, sourced from independent beekeepers in the Yorkshire Moorlands and the Midlands by our SALSA-certified British supplier. Our Acacia, Girasole e Tiglio honeys come from our family apiaries in Transylvania, Romania, where the Nistor family has kept bees for six generations. Every jar is single-origin and clearly labelled with its country of origin.
Il vostro miele è sostenibile?
Yes. We work only with beekeepers who place bee welfare above honey yield. We harvest only what the colony can spare. Our packaging is glass and we are close to achieving 100% plastic-free status. We are the official honey partner of Squadra di netball London Pulse, and we offer a dedicated discount through the Blue Light Card programme to NHS staff and emergency services workers.
Di cosa è fatto il miele grezzo?
Raw honey is made primarily of two natural sugars (fructose and glucose), with small amounts of other sugars, beneficial enzymes, trace vitamins, organic acids, antioxidant compounds, pollen grains, and natural minerals. The exact composition varies by floral source. Acacia honey, for example, has a particularly low water content of 15 to 19%, which contributes to its long shelf life.
Qual è la differenza tra nettare e miele?
Nectar is the sweet liquid produced by flowers to attract pollinators. Bees collect nectar and bring it back to the hive, where they reduce its water content through evaporation and add enzymes. Over several days, the nectar transforms into honey, a concentrated, long-lasting food store. The bees seal it inside wax cells when ready.
Il miele contiene zucchero o sciroppo?
No. We never add sugar, glucose syrup, rice syrup, corn syrup, or any other sweetener. Adulteration with cheap syrups is one of the most common forms of food fraud in the global honey trade, but it is something we have never done and never will. All sweetness comes naturally from the nectar the bees collect.
How is your honey delivered?
We deliver across the UK in glass jars with eco-conscious protective packaging. Standard UK delivery takes 2 to 5 working days. Free UK delivery applies to orders of three jars or more, and to every subscription order regardless of quantity. Subscription orders also receive 20% off every delivery.
Can I get an NHS or Blue Light Card discount?
Sì. NHS staff who register with their NHS email address receive a 15% lifetime discount on every order. Blue Light Card holders (covering NHS, emergency services, social care, and armed forces) receive a dedicated discount on all HoneyBee & Co. products. These are permanent commitments, not promotional offers.
Il miele grezzo è sicuro?
Raw honey is safe for healthy older children and adults when consumed in moderation. It should never be given to babies under twelve months because of the small risk of infant botulism. Raw honey should not be heated above 40°C if you want to preserve its natural enzymes and antimicrobial properties.
Quanta acqua contiene il vostro miele?
Our Acacia honey has an optimal moisture content of 15 to 19%, which prevents fermentation and supports its long shelf life. Many mass-produced honeys contain considerably more water, which can be a sign of over-dilution, harvesting too early, or adulteration. Low water content is one of the technical markers of a properly produced honey.
