British Wildflower Honey
Raw, unpasteurised British Wildflower Honey from the Midlands. Polyfloral and seasonal, the flavour shifts with every harvest, reflecting the wildflowers in bloom at the time of collection. Never blended. Never the same twice.
Tasting Notes
Never Blended. Never The Same Twice.
British wildflower honey is polyfloral — made from the nectar of dozens of wildflower species growing across the Midlands. The flavour changes with every season. What you taste in spring reflects different blooms to what you taste in summer. This is not inconsistency. It is authenticity.
Flavour
Delicate and balanced with floral, grassy undertones and a light citrus finish. Warm and gently sweet
Aroma
Fresh meadow and hedgerow notes with a soft floral bouquet that shifts with each harvest
Texture
Smooth and gently viscous. Will crystallise naturally over time — a sign of purity, not a fault
Colour
Light to mid amber. Shifts seasonally. Spring harvests tend to be lighter, summer richer and deeper
Why does the flavour change?
Every Jar Is a Snapshot of the British Countryside.
Oilseed rape blooms in spring, white clover in early summer, and heather, willowherb, thistle, and blackberry in late summer — each affecting the honey's properties and flavour profile. Mass-produced wildflower honey is blended across regions and seasons to produce a consistent product. Ours is not blended. You taste exactly what the bees collected, when they collected it. Origin & Provenance
From the Rolling Midlands Countryside
Our British Wildflower Honey is harvested from the rolling Midlands by independent beekeepers we have worked with for years. The Midlands landscape supports an exceptionally diverse range of native wildflower species — clover, borage, bramble, hawthorn, dandelion, poppy, cornflower, and ox-eye daisy among many others — each contributing to the nectar the bees collect across the season.
This diversity is what gives British wildflower honey its characteristic complexity and why no two harvests taste identical. We work with a SALSA certified British beekeeper who shares our commitment to sustainable, welfare-first beekeeping. The honey is cold-extracted, never heated, never filtered beyond the removal of wax and debris, and never blended with honey from other sources or seasons.
Most honey sold in the UK is blended from multiple countries and pasteurised to a shelf-stable consistency. British wildflower honey from a single named region is a fundamentally different product. Read the full story of our British supply chain on our About page.

Why British Wildflower
Three Reasons Our Wildflower Honey Is Different
Single Named Region
Not "a blend of EU and non-EU honeys" like most supermarket jars. Every jar traces to the British Midlands — one landscape, one season, one story. Read more about buying British honey.
Seasonal Character
Spring harvests carry lighter floral notes. Summer harvests are richer and deeper. Each jar is a snapshot of the Midlands countryside at the moment of collection. Never blended into consistency.
SALSA Certified Supply
Our British supplier holds SALSA certification — a nationally recognised food safety standard overseen by the Institute of Food Science and Technology. Every jar meets rigorous audited standards.
Health & Wellbeing
A Natural Alternative to Refined Sugar
Natural Energy & Nutrients
Raw wildflower honey provides natural energy through fructose and glucose alongside trace minerals, B vitamins, and naturally occurring enzymes. The NHS recognises honey as a natural food with a different nutritional profile to refined sugar. Unlike refined sugar, raw wildflower honey contains compounds that support rather than simply spike blood glucose. Source: NHS ↗
Local Pollen & Hayfever
British wildflower honey contains trace amounts of local Midlands pollen. The theory that local honey may help build tolerance to local allergens through small pollen exposure is popular and has some supporting observational research, though clinical evidence is limited. It is not a medical treatment for hayfever. Read more in our article on wildflower honey and hayfever.
Sore Throats & Colds
Research suggests raw honey can help soothe coughs and a sore throat, especially when stirred into warm drinks. The texture coats the throat, and the natural sugars may provide temporary relief. Source: National Library of Medicine ↗

How to Use
The Everyday All-Rounder
Versatile enough for toast, porridge, cooking, and baking. See our full recipe collection.
On Toast & Porridge
The classic drizzle for porridge, granola, yoghurt, and sourdough toast. Golden, gently sweet, and complex enough to taste through buttery textures.
In Cooking & Baking
Wildflower's depth stands up to cooked applications. Glazes for roasted vegetables, marinades for meats, sweetener in scones and cakes. See honey recipes.
In Tea & Hot Drinks
Stir into black tea, chamomile, or hot water with lemon. Add after the water has cooled below boiling to preserve the raw enzymes.
With Cheese
Pairs particularly well with mature cheddar, brie, and blue cheese. Our Cheese Board Selection features Wildflower alongside Heather and Acacia.
In Salad Dressings
Whisk with Dijon mustard, lemon, and olive oil for a classic vinaigrette. Balances bitter leaves and adds depth to grain salads.
As a Sugar Replacement
Honey is sweeter than sugar, so use roughly three-quarters of the quantity when replacing sugar in recipes. Reduce other liquids slightly to balance.
Provenance and Trust
From the British Countryside, Not a Global Blend
HoneyBee & Co. was founded by Dragos Nistor, whose family has kept bees for over six generations in Transylvania. When we expanded into British honey, we applied the same standards to our UK supply that we apply to our own family hives.
We work with a SALSA certified British beekeeper in the Midlands who shares our commitment to sustainable, welfare-first beekeeping. Every batch is checked for water content, purity, and the absence of adulteration. Our moisture content sits between 15 and 19%, which keeps flavour and texture stable without any artificial intervention.
Most wildflower honey sold in the UK is blended from multiple countries and pasteurised to a shelf-stable consistency. Ours is not blended with honey from other sources, seasons, or countries. When you buy a jar of our British Wildflower Honey, you know exactly where it comes from. Learn more about our three consecutive Vogue features.
Questions & Answers
Everything You Might Want to Know
What is wildflower honey and what does it taste like?
Wildflower honey is polyfloral — produced when bees forage across many different flower species rather than a single crop. Ours is harvested from the British Midlands where dozens of native species contribute to the nectar. The flavour is delicate, floral, and gently grassy with a light citrus finish. Exact notes vary by season. Learn more in our wildflower vs heather taste guide.
Why does the flavour change between jars?
Because we do not blend. Spring harvests carry notes of oilseed rape, dandelion, and hawthorn. Summer harvests pick up clover, bramble, and willowherb. Each jar reflects what was blooming when the bees were foraging. Mass-produced wildflower honey blends across seasons to produce a consistent taste. Ours is seasonal by design.
Does wildflower honey help with hayfever?
Local wildflower honey contains trace amounts of local pollen. Some people find daily consumption in the months leading up to hayfever season helpful, though clinical evidence is limited. It is not a cure or medical treatment for allergic rhinitis. Our article on hayfever relief covers the current research in detail.
My honey has crystallised. Is something wrong?
No — crystallisation is a natural sign of raw, unprocessed honey. Wildflower honey crystallises more readily than acacia because of its glucose content. If you prefer liquid, place the closed jar in warm water (no hotter than 40°C) for 15 to 20 minutes. Alternatively, embrace the set texture — it spreads beautifully on toast. See our guide to crystallised honey.
Is wildflower honey better than single-origin honeys?
Different, not better. Single-origin honeys like Acacia or Linden have a consistent, defined flavour profile. Wildflower honey has complexity and seasonal variation. For everyday use — toast, porridge, baking — wildflower is the most versatile. For specific applications — acacia in tea, linden with herbal infusions — single-origin is often preferable.
What does SALSA certification mean?
SALSA (Safe and Local Supplier Approval) is a nationally recognised food safety standard for small UK food producers, overseen by the Institute of Food Science and Technology. Our British supplier is SALSA certified — every batch is audited and meets rigorous safety requirements that go beyond minimum regulatory standards.
