Which Honey in Which Tea?
Match the intensity of your honey to the strength of your tea. Here is the full pairing guide.
Green and white tea
Use Acacia. These teas are delicate and easily overpowered. Acacia's mild, clean sweetness adds just enough without changing the character. Half a teaspoon is usually enough for a cup.
Chamomile and herbal teas
Use Linden. Its woody-minty notes naturally complement floral and herbal blends. Particularly good in chamomile, peppermint, lemon balm, or rooibos. A traditional Eastern European ritual before bed.
English Breakfast and black tea
Use Heather. Strong black teas need a honey that can hold its own. Heather's bold, complex character matches the depth of Yorkshire tea, Earl Grey, or Assam. Adds richness without being cloying.
Honey, lemon and tea for colds
Heather honey with hot water and fresh lemon is the classic British remedy for sore throats. The NHS lists hot honey and lemon among its self-care suggestions for coughs in adults and children over one year old.
Chai and milky tea
Heather works beautifully in chai. Its bold flavour cuts through spices and milk. Stir in after brewing, away from the heat, to preserve the raw enzymes.
