Our Wildflower honey comes from bees that forage freely across the rolling Midlands. Unlike single-floral honeys where nectar comes from one source, Wildflower is a natural blend of whatever is blooming at the time of collection. The result is a honey with real depth and a flavour profile that shifts with every harvest.
Hand-harvested in small batches by independent British beekeepers who place hives near pesticide-free meadows, woodland edges, and hedgerows. Cold-extracted and bottled without heat, filtering, or blending with foreign honey. SALSA food safety certified.
Six Ways to Use British Wildflower Honey
The most versatile British honey in the kitchen. Here is where its floral complexity shines.
On fresh bread or scones
The classic. Good sourdough, warm scone, proper butter, and a generous drizzle of wildflower honey. Tea time done properly.
Drizzled over baked camembert
A whole camembert scored across the top, warmed until gooey, finished with wildflower honey and fresh thyme. The floral complexity matches soft cheese perfectly.
In vinaigrettes and marinades
Whisk with olive oil, lemon juice or mustard, and a pinch of salt. The honey adds body and rounds out the acidity. Works on every salad from summer greens to roasted root vegetables.
Stirred into Greek yoghurt
Thick Greek yoghurt, a generous drizzle of wildflower, fresh berries, and a handful of granola. The floral notes lift plain yoghurt out of the ordinary.
With roasted root vegetables
Carrots, parsnips, and beetroot tossed with wildflower honey, olive oil, and thyme, then roasted at 200C until caramelised. The honey caramelises beautifully.
In hot lemon and honey
A traditional British remedy for sore throats and winter chills. A teaspoon of wildflower in warm water with lemon juice. Soothing and naturally sweet.

Baked Camembert with Wildflower Honey and Thyme
Ingrédients
- 1 whole camembert in its wooden box
- 2 tablespoons Wildflower honey
- 2 sprigs fresh thyme, leaves only
- 1 small garlic clove, thinly sliced
- Crusty bread or crackers to serve
Method
- Preheat oven to 200C. Remove camembert lid, keep base.
- Score the top of the cheese in a criss-cross pattern.
- Tuck garlic slices into the scores and scatter thyme leaves.
- Bake in the box on a tray for 12 to 15 minutes until gooey.
- Drizzle with wildflower honey and serve immediately.
Wildflower Honey and Mustard Vinaigrette
Ingrédients
- 4 tablespoons extra virgin olive oil
- 2 tablespoons cider vinegar or lemon juice
- 1 teaspoon wholegrain mustard
- 1 teaspoon Wildflower honey
- Salt and black pepper to taste
Method
- Combine all ingredients in a clean jar with a tight lid.
- Shake vigorously for 20 seconds until fully emulsified.
- Taste and adjust seasoning. Add more honey if too sharp.
- Store in the fridge for up to a week. Shake before each use.
Wildflower Honey Butter for Scones
Ingrédients
- 120g unsalted butter, softened
- 3 tablespoons Wildflower honey
- Pinch of sea salt flakes
- Optional: 1/4 teaspoon vanilla extract
Method
- Beat softened butter in a bowl until creamy.
- Add Wildflower honey and salt, beat until fully combined.
- Transfer to a small jar or ramekin and chill for 30 minutes.
- Spread on warm scones, crumpets, or toast.

Our British Wildflower honey comes from independent beekeepers in the Midlands we have worked with for years. Their hives sit near pesticide-free meadows, ancient hedgerows, and woodland edges, the places where genuine wild forage still thrives in the UK.
From April through late summer, bees travel up to five miles from the hive collecting whatever nectar the season offers. Spring brings hawthorn blossom and apple. By July and August, the bees are on clover, thistle, bramble, and countless hedgerow flowers. The result is a honey whose flavour shifts gently with every harvest, reflecting the true biodiversity of the British countryside.
Why Wildflower Beats Refined Sugar
Raw wildflower honey has a lower glycaemic index than refined sugar and carries a broader spectrum of natural antioxidants than most single-floral honeys, thanks to the diversity of its nectar sources. It is sweeter per gram than sugar, so you use less. Honey is still a free sugar and should be used in moderation, but in a fair comparison, raw British wildflower brings far more to the table.
