In March 2023, the European Commission's Joint Research Centre tested 320 batches of honey arriving at EU borders. Forty-six percent were flagged as suspected of being adulterated with sugar syrups. Here is the difference between what we sell and what most large brands sell.

What Is Raw Honey, and Why Does It Matter?

Sucres et enzymes naturels

Raw honey is mostly fructose and glucose, plus active enzymes the bees produce inside the hive. When honey is heated above 40°C, those enzymes are permanently destroyed. We never pasteurise.

Every jar of raw honey retains natural pollen grains and antioxidants from the flowers the colony visited. These compounds give each honey its distinct flavour. They are absent in pasteurised honey.

Six Generations of Beekeeping in Transylvania

HoneyBee & Co. was born from a family legacy spanning more than six generations in the Acacia forests of Transylvania, Romania. Founder Dragos Nistor grew up watching his father Nistor Fanel and grandfather Nistor Grigore tend the family hives. They taught him that exceptional honey is never rushed, never heated, and never compromised.

Today, those same family hives in Transylvania produce our Acacia, Sunflower, and Linden honeys. Our British range, Heather, Wildflower, and Soft Set, is hand-harvested in small batches each season from the Yorkshire Moors and the rolling Midlands by our SALSA-certified British supplier.

Whether the honey comes from our Transylvanian family apiaries or our British supplier, every jar shares the same founding principle: the wellbeing of the bees comes first. We harvest only what the colony can spare, and never compromise on purity. This approach is why our honey was featured in Vogue’s Summer Hot List across three consecutive editions in summer 2024.

Supermarket honey is typically heated and ultra-filtered to prevent it from ever setting, a process that strips away the very compounds that make raw honey valuable. Our honey is never heated above natural hive temperatures, which means the glucose naturally present in the nectar will, over time, form crystals. This is chemistry, not contamination. Heather Honey

Texture : Ferme et thixotrope

Naturally the firmest in our range. Behaves like a soft gel in the jar and becomes more fluid when stirred. Spread on warm toast or stir into porridge where the warmth loosens it beautifully.

Set doux Miel

Texture : Lisse et étalable

Intentionally crystallised through a controlled process that produces an ultra-fine, creamy consistency. The artisan alternative to butter, with a velvety spread every time.

Naturally runny when fresh. Over weeks or months it will set into a coarser crystalline texture. Both forms are normal. The flavour is unchanged.

Texture: Slow to crystallise

Acacia has the highest fructose-to-glucose ratio of any variety we stock, which is why it remains beautifully clear and liquid for longer than almost any other raw honey.

Miel de tournesol

Texture: Crystallises quickly

High glucose content means it crystallises within weeks of jarring. The result is a firm, pale yellow set with a mild, clean flavour. Ideal for spreading and baking.

Miel de tilleul

Texture: Medium set

Sets to a soft, medium-textured crystal that is easy to spoon and mild on the palate. Lovely stirred into warm tea or drizzled over mild cheeses.

How long does raw honey last?
Properly stored raw honey has an extraordinary shelf life. Jars of edible honey have been recovered from Egyptian tombs dating back over three thousand years. Store it sealed at room temperature, away from direct sunlight. There is no need to refrigerate. Crystallisation is normal and reversible by warming the jar in a bowl of warm water under 40°C.

Crystallisation is a natural process where the glucose component of honey forms small crystals. It is one of the most reliable signs that honey is raw and unprocessed. Heated and ultra-filtered supermarket honey is engineered to stay liquid forever, but at the cost of destroying its enzymes. Different varieties crystallise at different rates: Miel d'acacia stays liquid the longest because of its high fructose content, while Miel de tournesol sets quickly because of its high glucose content.
