British wildflower honey is polyfloral — made from the nectar of dozens of wildflower species growing across the Midlands. The flavour changes with every season. What you taste in spring reflects different blooms to what you taste in summer. This is not inconsistency. It is authenticity.

Oilseed rape blooms in spring, white clover in early summer, and heather, willowherb, thistle, and blackberry in late summer — each affecting the honey's properties and flavour profile. From the Rolling Midlands Countryside

Our British Wildflower Honey is harvested from the rolling Midlands by independent beekeepers we have worked with for years. The Midlands landscape supports an exceptionally diverse range of native wildflower species — clover, borage, bramble, hawthorn, dandelion, poppy, cornflower, and ox-eye daisy among many others — each contributing to the nectar the bees collect across the season.

This diversity is what gives British wildflower honey its characteristic complexity and why no two harvests taste identical. We work with a SALSA certified British beekeeper who shares our commitment to sustainable, welfare-first beekeeping. The honey is cold-extracted, never heated, never filtered beyond the removal of wax and debris, and never blended with honey from other sources or seasons.

Honey is sweeter than sugar, so use roughly three-quarters of the quantity when replacing sugar in recipes. Reduce other liquids slightly to balance.

Our moisture content sits between 15 and 19%, which keeps flavour and texture stable without any artificial intervention.

Most wildflower honey sold in the UK is blended from multiple countries and pasteurised to a shelf-stable consistency. Ours is not blended with honey from other sources, seasons, or countries. What is wildflower honey and what does it taste like?

Wildflower honey is polyfloral — produced when bees forage across many different flower species rather than a single crop. My honey has crystallised. Is something wrong?

No — crystallisation is a natural sign of raw, unprocessed honey. Wildflower honey crystallises more readily than acacia because of its glucose content. If you prefer liquid, place the closed jar in warm water (no hotter than 40°C) for 15 to 20 minutes. Alternatively, embrace the set texture — it spreads beautifully on toast. Is wildflower honey better than single-origin honeys?

Different, not better. Single-origin honeys like Acacia ou Tilleul have a consistent, defined flavour profile. Wildflower honey has complexity and seasonal variation. For everyday use — toast, porridge, baking — wildflower is the most versatile. For specific applications — acacia in tea, linden with herbal infusions — single-origin is often preferable.

SALSA (Safe and Local Supplier Approval) is a nationally recognised food safety standard for small UK food producers, overseen by the Institute of Food Science and Technology.
