How to enjoy

Six Ways to Use Bold Honeys

Strong honeys shine where mild ones disappear. Here is where each one earns its place.

🧀

Heather with blue cheese

Bold floral intensity meets pungent salt. Stilton, Roquefort, or gorgonzola with a spoon of Heather is one of the great cheese pairings.

🥃

Heather in a hot toddy

Whisky, hot water, lemon, cloves, and a heaping spoonful of Heather. The traditional remedy that doubles as a winter nightcap.

🥧

Sunflower in flapjacks and cakes

Sunflower's warm, buttery character and firm-set texture make it the baker's secret weapon. Better than golden syrup in honey cakes, flapjacks, and gingerbread.

🍞

Soft Set on warm sourdough

Soft Set is mild compared to the other two, but rich and buttery in its own right. Spread thickly on warm sourdough or fresh focaccia.

🍖

Heather glaze on roast lamb

Brush Heather honey on roast lamb in the last 10 minutes of cooking. The bold floral character cuts through the rich meat and creates a glossy caramelised crust.

🍰

Sunflower in honey loaf cake

A Romanian classic. Sunflower honey, warm spices, walnuts, and a slow bake produce a moist, dense honey loaf that improves over a few days.

Why this selection

Why the Boldest Three?

For people who find mild honeys too forgettable, and for foods that need a honey with real backbone.

1

Real Honey Character

These three taste like the flowers they came from. Heather is intensely floral. Sunflower is warm and buttery. Soft Set is mild but remarkably rich. None disappear into the food.

2

For Strong Pairings

Blue cheese, aged cheddar, roast meats, robust cocktails, dense bakes. These foods need a honey that holds its own. Mild honeys vanish; these stay.

3

Three Different Textures

Jelly-like Heather for spooning. Firm-set Sunflower for baking. Creamy Soft Set for spreading. Even within bold flavours, three distinct uses.

What Sets It Apart

Raw Honey vs Supermarket Honey

Not all honey is the same. Here is what sets ours apart.

HoneyBee & Co. Raw Honey

  • Never heated. Cold-extracted to preserve natural enzymes, pollen, and antioxidants.
  • Never blended. Single-origin from one geographical location with full traceability.
  • Minimal filtering. Natural pollen and beneficial compounds stay in the jar.
  • Fully traceable. Every batch tracked from hive to jar. Our British honey supplier holds SALSA Certification.

Typical supermarket honey

  • Pasteurised. Heated to 70 degrees or more, destroying natural enzymes.
  • Blended. "Blend of EU and non-EU honeys" with zero traceability.
  • Ultra-filtered. Pollen removed entirely, making origin impossible to verify.
  • Often adulterated. Some imported honeys contain added sugar syrups.
Three generations of the Nistor family of beekeepers - Fanel, Grigore, and Dragos Nistor - founders of HoneyBee & Co.

Six Generations. Two Countries.

From our family to yours.

Our story begins in the forests and meadows of Transylvania, where the Nistor family has tended bees for six generations. Same hives, same flora, same craft - passed from grandfather to grandson, mother to daughter.

Founder Dragos Nistor brought that tradition to Britain and built it out from there - partnering with British beekeepers in Yorkshire and the English Midlands whose work meets the same exacting standards: raw, unblended, traceable, and ethical.

Whether the jar in your hand came from our family hives or from one of our British partners, the standard is the same: raw, unblended, traceable, and ethical.

Common Questions

Frequently Asked

What makes these three honeys 'bold'?
Heather has intense floral complexity and a thixotropic, jelly-like texture. Sunflower has a warm, buttery, almost caramel character. Soft Set is mild compared to the other two but remarkably rich and buttery. All three have real character - none disappears into food.
Are bold honeys better quality than mild ones?
No - both are excellent, just different. Mild honeys (Acacia, Linden) have a clean, gentle character ideal for delicate foods. Bold honeys (Heather, Sunflower, Soft Set) have more pronounced flavour ideal for strong foods. Quality is about how the honey was made, not how strongly it tastes.
Why is Heather so much pricier than the others?
Heather honey has a single short harvest window each year (late summer), is harder to extract due to its jelly-like texture (often needs pressing rather than spinning), and yields are far smaller per hive than other honeys. Genuine British heather honey is one of the most prized in the world.
How does the saving compare to buying jars individually?
Buying the three jars individually would cost £34.97 (Heather £12.99, Sunflower £10.99, Soft Set £10.99). The Bold and Rich Trio is £33.22, a 5% saving plus free UK delivery.
Will the Sunflower jar be solid?
Yes - Sunflower honey naturally crystallises within a few weeks of jarring. The firm, pale yellow texture is exactly what makes it ideal for baking. Warm gently in water if you need it pourable.
Is this set a good gift?
Yes - especially for foodies, bakers, and cheese-board enthusiasts. Three full-size 280g jars in distinctly bold flavours. Add a personalised message at checkout.
What is the delivery time?
Free UK delivery on every Bold and Rich Trio order. Standard delivery is 2 to 5 working days via Royal Mail tracked.
Can I subscribe?
Yes. Subscribe and save 20% on individual jars - monthly or every three months.
